Two rooms, one soul: a café that opens with the city, and a lounge that stays up with it.
Sài Gòn, remembered
Before the city had a skyline, it had cafés on every corner — tiny stools, slow phin filters and radios playing the ballads of the day. When night came, the same streets filled with lounges where singers in silk took requests until late.
Élite Saigon brings both rooms to Footscray. By day it's the corner café: bạc xỉu, salted cheese coffee and a crispy pork bánh mì. By night the lights come down, the band counts in, and the cellar opens.

Robusta through a phin, condensed milk, salted cheese foam — the coffee of Sài Gòn's corner cafés, made slowly and made properly.
Music played close
Jazz standards, soul, bossa and nhạc vàng — the golden-age songs of old Sài Gòn — Thursday to Sunday from eight, in a room built for listening.
A proper pour
Champagne, Penfolds heritage reds, Japanese single malts and the Macallan, by the glass or the bottle, with boards to share.
